Does atta make them healthier? And texture-wise, which one's the better choice?

Atta puris are a little better for you: whole wheat keeps its fibre, so they fill you up more and digest slower than maida. But both are deep fried, so they soak up about the same oil. That frying matters more than the flour. For texture, maida puris come out softer, whiter and puff up big and smooth, which is why halwa puri shops use them. Atta puris are a bit firmer and nuttier, and they puff well too if you knead a stiff dough, rest it 15 minutes and fry in properly hot oil. Many people mix half atta and half maida for the best of both. Try it here: Puri Aloo Bhaji recipe
