White sauce always gets lumpy when I add milk
I melt butter, add the flour, and then as soon as I pour in the milk it turns into lumps that won't whisk out and the process goes longer. I never see this happening in YouTube tutorials and Instagram reels, it looks effortless there.

Don't worry, this happens to everyone, and the fix is easy. Cook the butter and flour for a minute on low heat, then take the pan off the heat before adding milk. Add the milk a little at a time: first just a splash, whisk until smooth like a thick paste, then another splash, and keep going. Using warm milk also helps a lot. Once all the milk is in, put it back on medium heat and keep whisking until it thickens. If you still get lumps, whisk hard for a minute or pass it through a strainer, and nobody will know.
