Ingredients
Missing something?
- No eggs? Use paneer or firm tofu in curries and rice dishes.
- No milk? Use milk powder mixed with water, or diluted tinned milk.
- No sugar? Use jaggery (gur) or honey, added gradually.
- No butter? Use ghee or oil.
Method
- Whisk the eggs, milk, sugar and milk powder together until smooth.
- Heat the ghee in a heavy pan on low heat and pour in the egg mixture.
- Stir all the time, breaking up the lumps, for 25–30 minutes. It will turn from scrambled egg to grainy, then golden and finally leave the sides of the pan with the ghee coming out.
- Stir in the cardamom and top with the nuts. Serve warm.
