Bhindi ki Bhujia
A home-style recipe for Bhindi ki Bhujia. Serves 3–4, ready in about 30 minutes.
Ingredients
- 500 g okra (bhindi), washed, dried well, tops cut off, in 2 cm pieces
- 4 tbsp oil
- 1 tsp cumin seeds
- 1 onion, sliced
- 3 green chillies, slit
- 1 tsp red chilli powder
- ½ tsp turmeric
- 1 tsp coriander powder
- 1 tsp salt
- ½ tsp dried mango powder (amchur), optional
Missing something?
- No okra? Use tori or green beans.
- No onion? Use spring onions, or a little onion powder (less depth).
- No green chilli? Use red chilli flakes or extra red chilli powder.
Method
- Heat the oil and add the cumin. When it sizzles, add the onion and green chillies and fry for 3–4 minutes until soft.
- Add the okra, chilli, turmeric and coriander powder. Cook uncovered on medium heat for 12–15 minutes, stirring gently now and then.
- When the okra is tender and no longer sticky, add the salt and amchur and cook for 2 more minutes.
Tip: Add the salt at the end and don't cover the pan; both make okra slimy.
