Ingredients
Missing something?
- No chicken? Use mutton or beef (cook longer), or soya chunks.
- No capsicum? Use extra cabbage or onion.
- No onion? Use spring onions, or a little onion powder (less depth).
- No tomato? Use 1 tbsp tomato paste per tomato, or 2 tbsp yogurt for tang.
Method
- Heat the oil, add the chicken and ginger-garlic paste and fry on high heat for 5–6 minutes until the chicken turns white.
- Add the salt, chilli flakes, chilli powder, turmeric, cumin and coriander and fry for 1 minute.
- Add the chopped tomatoes, cover and cook on medium heat for 8–10 minutes, until the chicken is cooked and the tomatoes are soft.
- Stir in the ketchup, vinegar and soy sauce and cook for 2 minutes until the masala is thick.
- Turn the heat to high and add the onion, capsicum, tomato squares and green chillies. Toss for 2–3 minutes only, so the vegetables stay crunchy. Sprinkle the black pepper.
