Chicken Patties
Home-style, with every amount and step. Tick things off as you go.
- Time
- 90 min
- Makes
- 12 patties

Ingredients
Missing something?
- No chicken? Use mutton or beef (cook longer), or soya chunks.
- No plain flour (maida)? Use atta, sifted (the result is denser).
- No butter? Use ghee or oil.
- No onion? Use spring onions, or a little onion powder (less depth).
Method
- Boil the chicken with the salt, pepper, garlic and 1 cup water for 20 minutes until cooked. Cool and shred finely.
- Melt the butter and fry the onion for 3–4 minutes until soft. Stir in the maida for 1 minute, then add the milk slowly, stirring, until it makes a thick white sauce.
- Add the chicken, pepper, chilli flakes, salt, green chillies and coriander. Cook for 2 minutes until very thick, then cool completely.
- Heat the oven to 200°C and line a tray with baking paper. Cut each pastry sheet into 12 squares (24 in all).
- Put a spoonful of filling on 12 squares, brush the edges with egg and cover with the other squares. Press the edges with a fork and make a small cut on top.
- Brush with egg and bake for 20–25 minutes, until puffed and deep golden. Cool for 5 minutes before eating; the filling is very hot.
