Ingredients
Missing something?
- No chicken? Use mutton or beef (cook longer), or soya chunks.
- No rice? Use any other rice, or broken rice (cooks faster).
Method
- Mix the marinade, rub it all over the chicken and into the cuts and leave for at least 2 hours, or overnight in the fridge.
- Boil the rice in plenty of water with the salt and cumin for 8–9 minutes until just cooked. Drain and mix with the pepper, chaat masala and oil.
- Heat the oven to 200°C. Stuff the chicken with as much rice as fits and tie the legs together with thread. Keep the rest of the rice warm.
- Put the chicken on a rack over a tray with ½ cup water in it. Cover with foil and roast for 50 minutes.
- Remove the foil, brush with the butter and roast for 25–30 minutes more, basting twice, until golden and the juice from the thigh runs clear.
- Rest for 10 minutes. Sprinkle with chaat masala and serve with the rest of the rice, lemon and raita.
