Home-style, with every amount and step. Tick things off as you go.
- Time
- 40 min
- Makes
- 12 muffins

Ingredients
Missing something?
- No plain flour (maida)? Use atta, sifted (the result is denser).
- No eggs? Use paneer or firm tofu in curries and rice dishes.
- No butter? Use ghee or oil.
- No sugar? Use jaggery (gur) or honey, added gradually.
- No milk? Use milk powder mixed with water, or diluted tinned milk.
- No baking powder? Use a pinch of baking soda with a squeeze of lemon, or skip it (the result will be denser).
- No dark chocolate? Use cocoa with a little butter and sugar.
Method
- Heat the oven to 190°C and put 12 paper cases in a muffin tray.
- Mix the maida, baking powder, salt and sugar in a big bowl.
- In another bowl, whisk the eggs, milk, melted butter and vanilla.
- Pour the wet mix into the dry and stir with a spoon only until there is no dry flour; lumpy is fine. Fold in most of the chocolate.
- Fill the cases almost to the top and scatter the rest of the chocolate over them.
- Bake for 20–22 minutes, until risen, golden and a toothpick comes out clean (apart from melted chocolate).
