Ingredients
Missing something?
- No potato? Use sweet potato or turnip (shaljam).
- No yogurt? Use milk with 1 tsp lemon juice, rested 10 minutes.
- No onion? Use spring onions, or a little onion powder (less depth).
- No tomato? Use 1 tbsp tomato paste per tomato, or 2 tbsp yogurt for tang.
Method
- Boil the potatoes in salted water for 10–12 minutes until just tender. Peel them and prick all over with a fork.
- Shallow-fry the potatoes for 6–8 minutes, turning, until golden. Lift them out.
- Heat 4 tbsp oil, add the cumin, then the onion paste and fry for 6–8 minutes until golden. Add the ginger-garlic paste for 1 minute.
- Add the tomatoes, salt, chilli, turmeric, coriander and fennel and cook for 6–8 minutes until the oil separates.
- Take the pan off the heat and stir in the yogurt, then put it back and cook for 3 minutes, stirring.
- Add the potatoes and ¾ cup water. Cover tightly and cook on the lowest heat (dum) for 10 minutes. Finish with garam masala and coriander.
