- ½ tsp salt
- ½ tsp cumin seeds, roasted and crushed
- 1 cucumber, finely chopped
- 1 tomato, seeds removed, finely chopped
- 1 small onion, finely chopped
- A pinch of red chilli powder
- A few mint leaves, chopped (optional)
Missing something?
- No yogurt? Use milk with 1 tsp lemon juice, rested 10 minutes.
- No cucumber? Use extra tomato or raw carrot.
- No tomato? Use 1 tbsp tomato paste per tomato, or 2 tbsp yogurt for tang.
- No onion? Use spring onions, or a little onion powder (less depth).
Method
- Whisk the yogurt with the salt and half the cumin until smooth.
- Stir in the cucumber, tomato and onion.
- Sprinkle the rest of the cumin, the chilli and the mint on top. Chill before serving.
Tip: Mix in the vegetables just before serving, or the raita turns watery.
