Mutton Seekh Kabab
A home-style recipe for Mutton Seekh Kabab. Makes 10 seekh kababs, ready in about 40 minutes, with steps for the usual way and for the air fryer.
Ingredients
- 500 g mutton mince (qeema), with some fat, minced fine
- 1 onion, grated and squeezed dry
- 3 green chillies, finely chopped
- A handful of fresh coriander, finely chopped
- 1 tbsp ginger-garlic paste
- 1 tsp salt
- 1 tsp red chilli powder
- 1 tsp coriander seeds, crushed
- 1 tsp cumin seeds, roasted and crushed
- ½ tsp garam masala
- 2 tbsp oil or ghee, plus more for brushing
Missing something?
- No mince (qeema)? Use finely chopped chicken or soya granules.
- No onion? Use spring onions, or a little onion powder (less depth).
- No green chilli? Use red chilli flakes or extra red chilli powder.
- No fresh coriander? Use skip it, or use fresh mint.
On the grill
- Mix everything and knead for 5 minutes, until the mince turns sticky and holds together. If you can, chill it for 30 minutes; this makes shaping easier and isn't included in the time.
- With wet hands, take a handful and press it around a thick skewer into a sausage about 15 cm long and 2–3 cm thick. Repeat with the rest.
- Grill over hot coals for 10–12 minutes, turning and brushing with oil, until browned all over and cooked through.
- No grill? Shape the kababs without skewers and cook them in 3 tbsp oil in a frying pan on medium heat for 10–12 minutes, turning gently.
Tip: Mutton kababs are richer than beef ones; serve them with green chutney and onion rings. For a smoky taste in a pan, put a hot piece of charcoal in a small foil cup among the kababs, add a drop of oil to it and cover for 2 minutes.
In the air fryer (about 35 min)
- Mix mutton qeema with onion, chilli, coriander and spices and press onto skewers.
- Air fry at 200°C for 13 to 15 minutes, turning halfway, until browned and cooked through.
Air fryer tip: Use short skewers that fit inside the basket, or cook the pieces without skewers.
Air fryer basics: Heat the air fryer for 3 to 5 minutes first. Don't fill the basket more than halfway. Brush or spray a little oil. Turn or shake halfway. Use paper liners with holes. Air fryers vary, so check a few minutes early the first time.
