Ingredients
Missing something?
- No spinach? Use frozen spinach, methi or any leafy greens.
- No paneer? Use firm tofu.
- No onion? Use spring onions, or a little onion powder (less depth).
- No tomato? Use 1 tbsp tomato paste per tomato, or 2 tbsp yogurt for tang.
- No cream? Use milk with a little butter, simmered to thicken (lighter).
Method
- Put the spinach in boiling water for 2 minutes, then straight into cold water. Squeeze lightly and blend to a smooth purée with the green chillies.
- Soak the paneer cubes in hot salted water while you cook, so they stay soft.
- Heat the oil and add the cumin. Fry the onion for 6–7 minutes until golden, then the ginger-garlic paste for 1 minute.
- Add the tomato, salt, chilli, turmeric and coriander and cook for 5 minutes until soft.
- Add the spinach purée and ½ cup water and simmer for 5 minutes.
- Drain the paneer, add it and simmer for 5 minutes more. Stir in the garam masala and cream.
