Ingredients
Missing something?
- No prawns? Use fish or chicken.
- No rice? Use any other rice, or broken rice (cooks faster).
- No yogurt? Use milk with 1 tsp lemon juice, rested 10 minutes.
- No onion? Use spring onions, or a little onion powder (less depth).
- No tomato? Use 1 tbsp tomato paste per tomato, or 2 tbsp yogurt for tang.
Method
- Mix the prawns with the turmeric, salt and lemon juice and set aside.
- Heat the oil and fry the onions for 12 minutes until deep golden. Lift out half for layering.
- Add the ginger-garlic paste, tomatoes, salt, chilli, coriander and cumin and cook for 6–8 minutes until soft and the oil separates. Stir in the yogurt and cook for 3 minutes.
- Add the prawns and cook for 3–4 minutes only, until they turn pink and curl. Stir in the garam masala and take off the heat.
- Meanwhile, boil 8 cups water with the whole spices and 1½ tbsp salt. Add the drained rice and boil for 5–6 minutes, until three-quarters cooked. Drain.
- Spread the rice over the prawn masala and top with the fried onion, green chillies, mint, coriander and colour milk.
- Cover tightly and cook on the lowest heat (dum) for 15 minutes.
