Russian Salad
A home-style recipe for Russian Salad. Serves 4, ready in about 25 minutes.
Ingredients
- 2 potatoes (about 300 g), peeled and cut into 1 cm cubes
- 1 carrot, cut into 1 cm cubes
- ½ cup peas (matar), fresh or frozen
- ½ tsp salt, for boiling
- 1 apple (seb), cored and cut into 1 cm cubes, skin on
- 1 tsp lemon juice
- ½ cup mayonnaise
- 2 tbsp cream (optional)
- ½ tsp salt
- ¼ tsp black pepper
- 1 tsp sugar
Missing something?
- No potato? Use sweet potato or turnip (shaljam).
- No carrot? Use extra cabbage or capsicum.
- No peas? Use diced carrot or green beans.
- No mayonnaise? Use thick hung yogurt with salt and pepper.
- No apple? Use pear or any seasonal fruit.
Method
- Boil the potatoes and carrot in salted water for 6 minutes. Add the peas and boil for 3–4 minutes more, until everything is just soft but holding its shape.
- Drain and rinse under cold water until cool. Drain well.
- Toss the apple with the lemon juice so it stays white.
- Mix the mayonnaise, cream, salt, pepper and sugar in a large bowl.
- Fold in the vegetables and apple until coated. Chill before serving.
Tip: Leftover boiled potatoes make this a 10-minute salad. A few pineapple chunks are a nice addition.
