Ingredients
Missing something?
- No rice? Use any other rice, or broken rice (cooks faster).
- No potato? Use sweet potato or turnip (shaljam).
- No carrot? Use extra cabbage or capsicum.
- No peas? Use diced carrot or green beans.
- No yogurt? Use milk with 1 tsp lemon juice, rested 10 minutes.
- No onion? Use spring onions, or a little onion powder (less depth).
Method
- Heat the oil and fry the onions for 12 minutes until deep golden. Lift out half for layering.
- Add the ginger-garlic paste, tomatoes, salt, chilli, turmeric and coriander and cook for 5–6 minutes until soft and the oil separates. Stir in the yogurt and cook for 2 minutes.
- Add the potatoes, carrots, peas and ½ cup water. Cover and cook on low heat for 12–15 minutes, until the vegetables are just tender and the masala is thick. Stir in the garam masala.
- Meanwhile, boil 8 cups water with the whole spices and 1½ tbsp salt. Add the drained rice and boil for 5–6 minutes, until three-quarters cooked. Drain.
- Spread the rice over the vegetables and top with the fried onion, green chillies, mint, coriander and colour milk.
- Cover tightly and cook on the lowest heat (dum) for 15 minutes. Mix gently from the side when serving.
