Ingredients
Missing something?
- No potato? Use sweet potato or turnip (shaljam).
- No peas? Use diced carrot or green beans.
- No onion? Use spring onions, or a little onion powder (less depth).
- No tomato? Use 1 tbsp tomato paste per tomato, or 2 tbsp yogurt for tang.
Method
- Heat the oil and add the cumin. When it sizzles, fry the onion for 5–6 minutes until golden.
- Add the ginger-garlic paste for 1 minute, then the tomatoes, salt, chilli, turmeric and coriander. Cook for 5–7 minutes until soft and the oil separates.
- Add the potatoes and fresh peas (frozen ones go in later) and stir to coat. Add 1½ cups water, cover and cook on low heat for 12–15 minutes, until the potatoes are soft. Add frozen peas for the last 5 minutes.
- Mash a few potato pieces to thicken the gravy. Sprinkle the garam masala and coriander.
