Aloo Sandwich
A home-style recipe for Aloo Sandwich. Makes 4 sandwiches, ready in about 30 minutes.
Ingredients
- 3 potatoes (about 400 g), peeled and cubed
- 2 green chillies, finely chopped
- ¾ tsp salt
- ½ tsp red chilli powder
- ½ tsp cumin seeds, roasted and crushed
- 1 tsp chaat masala (optional)
- 1 tbsp lemon juice
- A handful of fresh coriander, chopped (optional)
- 8 slices bread
- 2 tbsp butter / oil, for toasting
- Green chutney or ketchup, to serve (optional)
Missing something?
- No bread? Use roti or paratha as a wrap.
- No potato? Use sweet potato or turnip (shaljam).
- No green chilli? Use red chilli flakes or extra red chilli powder.
Method
- Boil the potato cubes in salted water for 12–15 minutes, until soft. Drain well and let them steam dry for a few minutes.
- Mash the potatoes and mix in the green chillies, salt, chilli powder, cumin, chaat masala, lemon juice and coriander.
- Spread the filling over 4 slices of bread and cover with the rest.
- Butter the outsides and toast in a frying pan on medium heat for 2–3 minutes on each side, pressing gently, until golden and crisp.
- Cut in halves and serve with chutney.
Tip: A pressure cooker boils the potatoes in about 8 minutes (2 whistles); leftover boiled potatoes make this a 10-minute snack.
