Besan ki Roti
A home-style recipe for Besan ki Roti. Makes 6 roti, ready in about 30 minutes.
Ingredients
- 2 cups (240 g) gram flour (besan) / 1½ cups besan and ½ cup wheat flour (atta), which is easier to roll
- 1 small onion, finely chopped
- 2 green chillies, finely chopped
- A handful of fresh coriander, finely chopped
- 1 tsp salt
- ½ tsp red chilli powder
- ½ tsp ajwain (carom seeds)
- ½ tsp cumin seeds
- 2 tbsp oil, for the dough
- About ½ cup water
- Ghee or oil, for cooking
Missing something?
- No gram flour (besan)? Use finely ground chana daal or rice flour (less flavour).
- No onion? Use spring onions, or a little onion powder (less depth).
- No green chilli? Use red chilli flakes or extra red chilli powder.
- No fresh coriander? Use skip it, or use fresh mint.
Method
- Mix the besan with the onion, green chillies, coriander, salt, chilli, ajwain, cumin and oil.
- Add the water a little at a time and knead into a soft dough. Rest for 10 minutes.
- Divide into 6 balls. Pat or roll each one between two sheets of plastic into a 15 cm roti, about ½ cm thick.
- Cook on a medium-hot tawa for 2 minutes on each side, brushing with ghee, until golden spots appear.
Tip: Besan dough cracks easily; patting it between plastic sheets keeps it whole. Serve with yogurt or butter.
