Ingredients
Missing something?
- No chicken? Use mutton or beef (cook longer), or soya chunks.
- No plain flour (maida)? Use atta, sifted (the result is denser).
- No eggs? Use paneer or firm tofu in curries and rice dishes.
- No milk? Use milk powder mixed with water, or diluted tinned milk.
- No cornflour? Use rice flour or plain flour (slightly less crisp).
Method
- Rub the chicken with the garlic paste, vinegar, salt, pepper, chilli and paprika. Leave for at least 1 hour, or overnight in the fridge.
- Mix all the coating ingredients in a wide bowl.
- Coat each piece in the flour, dip it in the egg and milk, then press it firmly into the flour again. Sprinkle a few drops of the egg mix over the flour and rub it in to make little crumbs that stick and turn crunchy.
- Heat the oil to medium (about 160°C); a pinch of flour should sizzle gently, not burst. Fry 3–4 pieces at a time for 14–16 minutes, turning, until deep golden and the juice near the bone runs clear.
- Drain on a rack. Serve with fries, bun and garlic mayo.
