Ingredients
Missing something?
- No chicken? Use mutton or beef (cook longer), or soya chunks.
- No tomato? Use 1 tbsp tomato paste per tomato, or 2 tbsp yogurt for tang.
- No green chilli? Use red chilli flakes or extra red chilli powder.
Method
- Heat the oil and fry two-thirds of the ginger for 1 minute until fragrant. Add the garlic paste and chicken and fry on high heat for 5 minutes until the chicken changes colour.
- Add the tomatoes, salt, chilli, turmeric, coriander and cumin. Cover and cook on medium heat for 10 minutes, until the tomatoes have melted.
- Uncover, add the yogurt and cook on high heat for 5 minutes, stirring, until the masala is thick and the oil separates.
- Add the black pepper, garam masala, green chillies and the rest of the ginger. Cook for 2 minutes more and finish with coriander.
