Shashlik with Rice
A home-style recipe for Shashlik with Rice. Serves 4, ready in about 50 minutes, with steps for the usual way and for the air fryer.
Ingredients
- 500 g boneless chicken, in 3 cm cubes
- For the marinade: ½ cup (125 g) yogurt, 1 tsp ginger-garlic paste, 1 tsp salt, 1 tsp red chilli powder, ½ tsp black pepper, 1 tbsp lemon juice
- 2 capsicums (shimla mirch), in 3 cm squares
- 2 onions, in 3 cm squares
- 2 tbsp oil
- For the sauce: 4 tbsp ketchup, 2 tbsp chilli sauce, 1 tbsp vinegar, ½ tsp black pepper, ¼ tsp salt
- To serve: 2 cups (400 g) rice, washed, and 1 tbsp salt
Missing something?
- No chicken? Use mutton or beef (cook longer), or soya chunks.
- No capsicum? Use extra cabbage or onion.
- No onion? Use spring onions, or a little onion powder (less depth).
- No yogurt? Use milk with 1 tsp lemon juice, rested 10 minutes.
- No rice? Use any other rice, or broken rice (cooks faster).
On the grill
- Mix the chicken with the marinade. If you have time, leave it for 1 hour; if not, cook it right away.
- Thread the chicken, capsicum and onion onto skewers, one after another.
- Boil the washed rice in 10 cups water with 1 tbsp salt for 10–12 minutes, until just done, then drain. Cook the skewers and sauce while it boils.
- Cook the skewers in a frying pan with the oil on medium-high heat for 10–12 minutes, turning, until the chicken is cooked and browned. You can also grill them, or bake them at 200°C for 15–20 minutes.
- Mix the sauce ingredients and warm them in a small pan.
- Serve the skewers on the rice with the sauce poured over.
Tip: If you use wooden skewers, soak them in water for 30 minutes so they don't burn.
In the air fryer (about 45 min)
- Marinate chicken cubes in yogurt, spices and lemon and skewer with capsicum and onion.
- Air fry at 200°C for 12 to 14 minutes, turning halfway, until cooked through.
- Serve with boiled or fried rice.
Air fryer tip: Use short skewers that fit inside the basket, or cook the pieces without skewers.
Air fryer basics: Heat the air fryer for 3 to 5 minutes first. Don't fill the basket more than halfway. Brush or spray a little oil. Turn or shake halfway. Use paper liners with holes. Air fryers vary, so check a few minutes early the first time.
