Ingredients
Missing something?
- No beef or mutton (gosht)? Use chicken (cook for less time).
- No liver (kaleji)? Use chicken liver (cooks faster).
- No brain (maghaz)? Use no good swap, choose a different dish.
- No tomato? Use 1 tbsp tomato paste per tomato, or 2 tbsp yogurt for tang.
- No green chilli? Use red chilli flakes or extra red chilli powder.
Method
- Boil the kidneys and heart in water with half the salt and turmeric for 20–25 minutes until tender. In a separate small pan, simmer the brain in water with the rest of the salt and turmeric for 5 minutes. Drain everything.
- Heat the oil and half the butter on a large flat tawa or wide pan. Add the liver and fry on high heat for 3–4 minutes until it just loses its pink colour.
- Add the ginger-garlic paste, tomatoes, salt, chilli flakes, cumin, coriander seeds and pepper and cook for 5 minutes until the tomatoes break down.
- Add the kidneys, heart and brain. With two metal spatulas, chop and mix everything on the hot tawa for 5–6 minutes; the "kat-a-kat" sound is where the name comes from.
- Add the rest of the butter, the green chillies, garam masala, coriander and ginger and chop for 2 minutes more. Serve hot with naan.
