Ingredients
Missing something?
- No plain flour (maida)? Use atta, sifted (the result is denser).
- No eggs? Use paneer or firm tofu in curries and rice dishes.
- No butter? Use ghee or oil.
- No sugar? Use jaggery (gur) or honey, added gradually.
- No milk? Use milk powder mixed with water, or diluted tinned milk.
- No baking powder? Use a pinch of baking soda with a squeeze of lemon, or skip it (the result will be denser).
Method
- Heat the oven to 175°C and put 12 paper cases in a muffin tray.
- Beat the butter and sugar for 3–4 minutes until light. Beat in the eggs one at a time, then the vanilla.
- Fold in the maida, baking powder and salt in two batches, alternating with the milk, until just smooth.
- Fill the cases two-thirds full and bake for 18–20 minutes, until a toothpick comes out clean.
- Cool completely. For the frosting, beat the butter until pale, then beat in the icing sugar, milk and vanilla, and pipe or spread on top.
