Ingredients
Missing something?
- No beef or mutton (gosht)? Use chicken (cook for less time).
- No rice? Use any other rice, or broken rice (cooks faster).
- No yogurt? Use milk with 1 tsp lemon juice, rested 10 minutes.
- No onion? Use spring onions, or a little onion powder (less depth).
- No tomato? Use 1 tbsp tomato paste per tomato, or 2 tbsp yogurt for tang.
Method
- Heat the oil and fry the onions for 12–15 minutes until deep golden. Lift out half for layering.
- Add the mutton and ginger-garlic paste and fry on high heat for 8 minutes until browned.
- Add the tomatoes, salt, chilli, turmeric and coriander and cook for 5 minutes. Stir in the yogurt and cook until the oil separates.
- Add 2 cups water, cover and cook on low heat for 1 hour–1 hour 15 minutes, until the meat is tender and the masala is thick with the oil on top. Add a little hot water if it dries out before the meat is soft. Stir in the garam masala.
- Meanwhile, boil 12 cups water with the whole spices and 2 tbsp salt. Add the drained rice and boil for 5–6 minutes, until three-quarters cooked. Drain.
- Spread the rice over the mutton. Top with the fried onion, green chillies, mint, coriander and saffron milk.
- Cover tightly and cook on the lowest heat (dum) for 20 minutes. Mix gently from the side when serving.
