Ingredients
Missing something?
- No beef or mutton (gosht)? Use chicken (cook for less time).
- No wheat flour (atta)? Use maida (plain flour), the result is softer.
- No onion? Use spring onions, or a little onion powder (less depth).
- No yogurt? Use milk with 1 tsp lemon juice, rested 10 minutes.
Method
- Heat the oil in a heavy pot (or a clay kunna pot) and fry the onions for 10 minutes until golden.
- Add the mutton and ginger-garlic paste and fry on high heat for 8–10 minutes until the meat is browned.
- Add the salt, chilli, turmeric, coriander, fennel and dry ginger and fry for 2 minutes. Stir in the yogurt and cook until the oil separates.
- Add 4 cups hot water, cover tightly and cook on the lowest heat for 1½–2 hours, until the meat is very soft and coming off the bone. Add hot water if the gravy gets too low.
- Stir in the atta mixture and simmer for 10 minutes, stirring, until the gravy is silky and thick and the oil floats on top.
- Sprinkle the garam masala, ginger, green chillies and coriander. Serve with naan or roti.
