Ingredients

Missing something?

  • No chicken? Use mutton or beef (cook longer), or soya chunks.
  • No rice? Use any other rice, or broken rice (cooks faster).
  • No potato? Use sweet potato or turnip (shaljam).
  • No yogurt? Use milk with 1 tsp lemon juice, rested 10 minutes.
  • No tomato? Use 1 tbsp tomato paste per tomato, or 2 tbsp yogurt for tang.
  • No onion? Use spring onions, or a little onion powder (less depth).

Method

  1. Heat the oil and fry the onions for 12–15 minutes until deep golden. Lift out half for layering.
  2. Fry the potatoes in the same oil for 5–6 minutes until golden outside, and lift them out.
  3. Add the chicken and ginger-garlic paste and fry on high heat for 5 minutes. Add the salt, chilli powder, chilli flakes, turmeric and coriander and fry for 2 minutes.
  4. Add half the tomatoes and the yogurt and cook for 5 minutes. Add the potatoes, dried plums and ½ cup water, cover and cook on low heat for 20 minutes, until the chicken and potatoes are tender and the masala is thick with the oil on top. Stir in the garam masala.
  5. Meanwhile, boil 12 cups water with the whole spices and 2 tbsp salt. Add the drained rice and boil for 5–6 minutes, until three-quarters cooked. Drain.
  6. Spread half the rice in the pot, then the chicken masala, then the rest of the rice. Top with the remaining tomato slices, green chillies, fried onion, mint, coriander, colour milk and kewra.
  7. Cover tightly and cook on the lowest heat (dum) for 20 minutes. Mix gently from the side when serving.
